Hello Vegetable Lovers: Over the next while, watch for some housekeeping with the Alphabet of Vegetables here on A Veggie Venture. CORN: THE BASICS
Also called Sweet Corn, Sweetcorn, Maize [maze], Miellie [mee-lee] and Maellie.
SEASON
The corn season is "summer". 
Sweet corn becomes
less sweet about three days after picking, so the fresher the better. In the grocery store, watch for ears still in their husks with glossy, not dry silk. But for freshness, a farmers market or vegetable stand with locally grown, just-picked corn is a better bet for really good corn.

CORN ANATOMY Technically, the
corn plant is a grain, not a vegetable, but we treat its "
ears of corn" (also called
corn cobs) and "
corn kernels" as vegetables. "
Corn husks" wrap the kernels in a natural protective covering; "
corn silk" extends out the tip of the husk, one thread per kernel!; the liquid expressed from the kernels is called "
corn milk". Once dried and treated, the husks are used to wrap tamales but otherwise the husks and corns are inedible. But don't throw away the cobs, just throw them into the pot to add sweetness to vegetable stock!

VARIETIES Sugar-rich varieties of corn are called "sweet corn" and raised for human consumption. Field corn is raised for animal consumption. "Indian corn" has multi-colored kernels and is beautiful in fall floral displays.

MONO CROPS In The Omnivore's Dilemma, food activist Michael Pollan decries the
prevalence of corn in commercial foods, where you'd never expect it like industrial beef, chicken and other meat; salad dressing; soda pop. Frozen corn and canned corn are acceptable out-of-season for dishes where corn is just one of many ingredients.
