Recipe: Bulgur Chili

We love chili in this house. It seems my recipe tab has several of them. This one is a keeper for sure. I came across this recipe when I was searching anything that included bulgur. I've been trying to work on clearing out our pantry. It seems we buy food, stick it in the pantry and don't eat it. This includes cans of soup and lots of different grains. I've cooked with bulgur before but its been sitting in the pantry ever since. I did find a few and this one seemed the easiest. The photo is not mine. I stole it because the photo I had was terrible. The photo doesn't include sour cream but I don't eat chili without sour cream.



Ingredients:
3/4 cup of bulgur
2 cups of boiling water
1 1/2 cups of chopped green peppers
1 large onion
2 teaspoons of oil olive
2 cups of tomato or vegetable juice
1 can of kidney beans (drained)
1 can of pinto beans  (drained)
1 can of diced tomatoes
1 8oz can of tomato sauce
1 cup water
2 or 3 tablespoons of chili powder
2 garlic gloves, minced
1/2 teaspoon ground cumin
1/8 to 1/4 teaspoon of cayenne pepper
shredded cheese (optional)
sour cream (optional)

1. Place bulgur in large bowl and stir in the two cups of boiling water. Cover and let sit for 30 minutes or until the water is mostly absorbed. It may seem like a lot of water when you put it in. But it will absorb. Drain and pat dry.

2. In a large sauce pan, sauté green peppers and onion in oil. Add garlic, chili powder, cumin and cayenne and cook a few minutes. Add tomato/vegetable juice, beans, tomatoes, water and tomato sauce. Bring to boil and simmer for at least 25-30 minutes. Add cheese and sour cream if you choose.


This recipe was super easy to make. I started cutting the veggies right after I started to cook the bulgur. Once everything was in the pot I did the dishes then changed into my running clothes. I decided my goal this time was going to try to run 1.25 miles without stopping. But once I ran 1.25 miles I decided I still felt good so I was going try to run .25 more. This continued until I ran 2 miles. Yes 2 miles without stopping. My pace really wasn't that terrible either. 11:44. Pretty exciting considering I had major surgery six weeks ago and haven't consistently ran since October. I am so glad I continued to do cardio when I quit running though otherwise theres no way I could be running so well right now. I am also happy to know that two months of no exercise didn't set me back as far as I thought it would have. 
I have still been working on strength training. This is what happened when I wanted to do some mat work. 
I think this looks like a good spot to lay.
