Recipe: Lentil Shepard Pie

Another one from vegweb.com. So many recipes! So many options!



Ingredients:

4 medium potatoes, chopped
olive oil
1 medium sized onion, chopped
1/2 cup of celery
2 garlic cloves
2 cups cooked lentils
8 ounces of tomato sauce
2 tablespoons nutritional yeast
basil to taste
oregano to taste
parsley to taste

Directions:

1. Preheat oven to 350 degrees.
2. Boil potatoes until tender
3. Cook lentils
4. Saute onion, celery, and garlic in olive oil. Add tomato sauce and lentils. Simmer for 15 minutes.
5. Mash up the potatoes.
6. Pour lentil mix in baking dish. Cover with potatoes and sprinkle with nutritional yeast. Cover and bake in over for about 20 minutes.

I love lentils and I love shepard's pie.  One would think that this would be a win-win recipe. The recipe can be summed up with these faces.

Okay. So it wasn't that bad. It lacked flavor but it wasn't a total waste. With enough hot sauce anything can be fixed. I'll be honest. I forgot (mommy brain) to add the basil and oregano (I would have left the parsley out anyway) but I really don't think that would have helped anyway. It did taste better the next day but it's not one that I would make again. It's not even one I would try to fix to make taste better. Not even one that I would recommend. I don't have to many recipe fails but this one is certainly one of those.
