I actually found this recipe on WeighWatchers website.  I thought it looked simple and tasty. Easy is good these days.  Recipes that don't take a whole lot of time work great when I am trying to get things done around the house. I've made them twice now. The first time I made them they were kinda... blah. So I added some cayenne the second time and they tasted much better.  What works great is they perfect for salads, which I have almost everyday. I usually like to add some type of protein to my salads. Veggie burgers and beans are what I usually use.

Ingredients:

1 cup dry lentils, red variety
1 1/4 cup water
1 cube of vegetable bouillon
1/2 rib medium uncooked carrot, chopped into little pieces
1/2 rib uncooked celery, chopped into little pieces
1 medium uncooked onion, diced
1 tsp oregano
1/2 tsp dried thyme
1 tsp cayenne
1 cup dried breadcrumbs

Instructions:

1. Combine lentils, water, bouillon carrots, celery, onion and spices. Bring to a boil, then cover and simmer for 20 minutes.

2. Stir in breadcrumbs and form into six patties.  Cook on stove in a little oil. You can also place a piece of foil (lightly coated with olive oil) on the grill and cook them there. If you put them directly on the grill they will likely stick.

I've made burgers similar to this before. The biggest issue is that they fall apart when I cooked them. These burgers didn't do that but then again... they did have a lot of bread crumbs (I even used less than the recipe called for). The breadcrumbs really helped hold everything together. It's one I'll likely keep making adding different veggie and spices until I find what I like the best.
